Homemade Crackers

Ingredients:
500g ‘00’ Flour
120ml Extra virgin olive oil
4g dry yeast
10g salt
180ml water
Directions:
Mix into a sticky dough.
Knead for 5mins, cover, and rise for 2 hours.
Roll out to a 2mm thickness (ideally with a pasta machine) Cut into 6 x 12 cm rectangles, prick with a fork in the center and punch 5 holes with the thick end of a kebab skewer (as shown).
Place them on baking paper and brush with a mixture of oil and water (half and half)
Sprinkle with salt, rosemary, or any dry herb of your choice.
You can add it directly to the dough instead.
Bake in a preheated 200°c oven for 10-12mins or until lightly browned.
