4 Cheese Froġa tat-Tarja

Ingredients:
400g Capellini Pasta (tarja)
150g Mozzarella
50g Grated Pecorino Cheese
200g Fresh Goat's Cheese
50g Feta Cheese
3 Eggs
2tbsp Fresh Parsley
Salt & Pepper
1tsp Olive Oil
Directions:
1. In a small bowl combine the eggs, pecorino, parsley, salt & pepper. Mix well.
2. Cook the pasta as instructed and let it cool.
3. Add the egg mixture to the pasta and combine well.
4. In a separate bowl combine the mozzarella, goat's cheese and feta together.
5. Heat well an oven proof deep frying pan or a cast iron one.
6. Put half of the pasta mixture in the pan and top it with the cheese mixture.
7. Add the remaining pasta mixture, cover and fry gently for about 8 minutes.
8. Uncover and place in a hot 220°c oven and cook until golden. This should take around 15 minutes.
9. Flip onto a serving tray and cut into portions.
