Mac and Goat Cheese

Ingredients:
250ml Milk
250ml Fresh Cream
300g Elbow Pasta
1/2tsp Salt
1tbsp Unsalted Butter
100g Cheddar Cheese
1 Dried Gozo Cheeselet
100g Guanciale/Bacon
Pinch of Ground Nutmeg & Cayenne Pepper
Spring Onion to serve
Directions:
1. Fry guanciale in a hot saucepan until crispy.
2. Remove from saucepan but leave in the fat. Then add the milk, cream, salt, cayenne pepper, nutmeg and butter.
3. When it's about to boil add the pasta and stir well.
4. Simmer on a medium heat for 8 minutes stirring constantly.
5. Turn off the heat. Add the cheeses, mix well and cover for 3 minutes.
6. Serve immediately and top it with guanciale and spring onion.
7. Enjoy!
