Seed & Nut Cookies

Ingredients for approx. 10 cookies:
80g Walnuts
80g Pecans
80g Unsalted Peanuts
100g Almonds
60g Almond Flakes
100g Pumpkin Seeds
80g Sunflower Seeds
100g Pitted Dates (chopped)
30g Sesame Seeds
20g Chia Seeds
50g Brown Flax Seeds
1/2tsp Cinnamon Powder
1/4tsp Salt
2 Egg Whites
50g Honey
Method:
This recipe couldn’t be simpler, just add all the dry ingredients in a large bowl. Mix them well together.
Add the egg whites and honey, and mix well.
Using a cookie cutter form the cookies onto a baking sheet lined with baking paper.
Bake in a preheated 180°c oven for about 15-20 minutes.
Transfer them onto a cooling rack. Be careful as they might be a little fragile.
Let them cool off completely before serving.
You can store them in an airtight container for up to a week.
