Braġjoli with Mozzarella
Ingredients for 4 persons:
Filling:
250g Ground Beef
30g Grated Parmesan
2 Hard-Boiled Eggs (chopped)
2tbsp Parsley (chopped)
30g Breadcrumbs
1 Egg
Salt & Pepper to taste
4 Slices of Beef Minute Steak (or veal)
4 Slices Collar Bacon
4 Slices Mozzarella
Sauce:
1 Large Onion (chopped)
2 Garlic Cloves (minced)
2 carrots (sliced or cubed)
400g Tomato Sauce (passata)
200ml Chicken Stock
1/2 Glass of Red Wine
Directions:
1. Start with the filling. In a small bowl mix together the ground beef, parmesan, boiled eggs, parsley, and breadcrumbs. Combine together with an egg and season to taste. Set aside.
2. Flatten out the beef slices, season with salt & pepper and add a mozzarella & a bacon slice in the center. Place 1/4 of the beef mixture on top and gently fold like a spring roll being careful to close the sides too. It should hold by itself but you can also use kitchen string or toothpicks.
3. Place a saucepan or a large pot on a medium-high flame. Add the olive oil and the onion. Place the beef olives on top and gently seal from both sides for about 2 minutes per side.
4. Remove the beef olives and add the carrot, garlic, wine, and tomato sauce. Cook for about 5 minutes then add the beef olives.
5. Add the chicken stock, cover and cook for about 45 minutes turning the beef olives a couple of times.
6. Serve with some freshly chopped parsley.
