Fried Lampuki

This recipe is for the classic fried lampuki served with a caper/tomato relish and potato chips.

Ingredients:

About 1kg of fresh lampuki

350g Cherry Tomatoes

A fistful of Fresh Basil

5 Cloves of Garlic

40g Capers

40g Black Olives (sliced)

1tsp Anchovies

1tbsp Tomato Purée (kunserva)

4tbsp Olive Oil

70g All-Purpose Flour

70g Semolina

Directions:

  • 1. In a food processor purée the cherry tomatoes. Then add the basil and use the pulse function to chop it up lightly. Do not over mix! Set aside.

  • 2. In a hot pan add 2tbsp of olive oil and lightly fry the sliced garlic. Add the anchovies and mix until dissolved.

  • 3. Fry for about 3 minutes and add the tomato mixture.

  • 4. Add the capers, black olives, tomato purée, and black pepper and stir well. Bring to a boil, then simmer for 30 minutes to thicken. Adjust with some salt if needed.

  • 5. Combine flour and semolina and coat the sliced lampuki well.

  • 6. Fry in some olive oil for about 4 minutes each side. Depending on the size of the fish.

  • 7. Serve on top of the tomato relish with some freshly fried potato chips.

  • 8. Enjoy
