Fried Lampuki

Ingredients:
About 1kg of fresh lampuki
350g Cherry Tomatoes
A fistful of Fresh Basil
5 Cloves of Garlic
40g Capers
40g Black Olives (sliced)
1tsp Anchovies
1tbsp Tomato Purée (kunserva)
4tbsp Olive Oil
70g All-Purpose Flour
70g Semolina
Directions:
1. In a food processor purée the cherry tomatoes. Then add the basil and use the pulse function to chop it up lightly. Do not over mix! Set aside.
2. In a hot pan add 2tbsp of olive oil and lightly fry the sliced garlic. Add the anchovies and mix until dissolved.
3. Fry for about 3 minutes and add the tomato mixture.
4. Add the capers, black olives, tomato purée, and black pepper and stir well. Bring to a boil, then simmer for 30 minutes to thicken. Adjust with some salt if needed.
5. Combine flour and semolina and coat the sliced lampuki well.
6. Fry in some olive oil for about 4 minutes each side. Depending on the size of the fish.
7. Serve on top of the tomato relish with some freshly fried potato chips.
