Pie Sides

Parmesan Mashed Potatoes & Honey Mustard Green Beans, perfect to serve as a side dish to pies or any protein dishes. We are serving them with Maypole’s ready-made pies. 


Ingredients: (about 4 servings)

  • Maypole Beef Pie

  • Maypole Chicken & Mushroom Pie

Honey Mustard Green Beans

  • 250g Cherry Tomatoes (sliced in 2)

  • 500g Green Beans

  • 1tbsp English Mustard

  • 1 Garlic Clove (minced)

  • 1tsp Honey

  • 1tbsp E/V Olive Oil

  • 20g Roasted Walnuts

  • Salt & Pepper

Parmesan Mashed Potatoes

  • 600g Potatoes

  • 1tbsp Salted Butter

  • 1tsp Garlic Granules

  • 200ml Fresh Cream

  • 200g Grated Parmesan

  • Fresh Parsley 

  • Salt & Pepper


Method:

  1. For the green bean dish, wash and slice the cherry tomatoes in half. 

  2. Place them on a baking tray cut facing side up. Spray with little oil, salt and pepper.

  3. Bake in a hot oven until nicely coloured. About 15 minutes in a 220°c oven.

  4. In the meantime wash and cut the tips of the green beans. 

  5. Boil them in salted water for 2-4 minutes, then cool them off immediately under running water or ice bath. This will stop the cooking.

  6. Grain and transfer them to a bowl. 

  7. For the dressing, simply mix the mustard, honey, and garlic together. 

  8. Drizzle the beans with some olive oil, add the dressing and mix well.

  9. Add the roasted tomatoes and some salt and pepper to taste. Add the chopped walnuts just before serving. 

  10. For the Parmesan potatoes, peel, wash and cut the potatoes into small cubes. 

  11. Boil in salted water until you can easily prick them with a fork. This should take about 25 minutes. 

  12. While the potatoes are boiling, place the butter in a small saucepan and melt over a low-medium heat flame.

  13. Add the garlic granules, mix well and then add the cream.

  14. Bring it to a gentle boil then turn off the heat.

  15. Drain the water from the potatoes, add the grated Parmesan and some freshly ground pepper, and mash them together until nice and fluffy.

  16. Add the hot cream on top, and mix well until you get a creamy texture. At this point adjust with salt. 

  17. Add some freshly chopped parsley on top and they are ready to serve.

  18. These side dishes go well with pies, chicken, beef, pork or fish.
