Healthy Anchovy & Caramelised Onion Sourdough Bread

This is one of the tastiest sourdough breads you can taste! It is so flavourful that you can enjoy it by itself or with just a little olive oil. Here’s a quick, guilt-free snack. 


Ingredients (Serves 2)

  • 4 slices Maypole Sourdough Bread (Caramelised Onion & Olives)

  • 1 ripe Avocado

  • 2 fresh Ġbejniet (drained)

  • 1 tbsp Olive Oil

  • 1 tsp Lemon Juice

  • 1-2 tsp Sriracha (adjust to taste)

  • Chili Flakes (optional)

  • Salt & Black pepper (to taste)

  • Optional Toppings: cherry tomatoes, fresh basil.


Method:

  1. Cut the sourdough bread into thick slices and drizzle them with olive oil. Toast in a pan until golden and crispy on both sides.

  2. Mash the avocado with lemon juice, salt, and black pepper in a small bowl.

  3. Spread the mashed avocado onto the toasted sourdough. 

  4. Crumble fresh ġbejniet with little olive oil and spread them on top.

  5. Finish with a drizzle of sriracha and little chili flakes for heat.

  6. Add cherry tomatoes and basil if desired.
