Breakfast on a Hash Brown Plate

Ingredients:
Hash Brown:
2 Large Potatoes (grated)
1 Small Shallot (finely grated)
1 Egg White
2tbsp Plain Flour
1tsp Olive Oil
Salt & Pepper
Breakfast:
4 Rashers Streaky Bacon
2 Maltese Sausages
1tsp Butter
200g Mushrooms
1tsp Dry Parsley
150g Cherry Tomatoes
1 Egg
200g Baked Beans
Salt to taste
Directions:
1. Start with the hash brown plate. Peel and grate the potatoes and place them in water to remove the starch. Drain them well on kitchen paper and remove moisture as much as possible.
2. Transfer them to a large bowl and add the shallot, egg white, flour, and season well.
3. Heat well a cast iron or oven proof pan and add 1tsp of olive oil. Add the potato mixture and spread it evenly creating the (plate) edges.
4. Fry at medium-high heat then transfer the pan to a preheated oven.
5. Bake at 220°c for about 20 minutes or until golden brown.
6. While it's baking, fry the bacon and sausages. Remove the bacon and add a knob of butter. Add the mushrooms and fry them with some dry parsley and salt.
7. Add the cherry tomatoes and finally the egg.
8. This whole process should take around 10 minutes at medium heat.
9. When the hash brown is golden brown carefully remove it from the pan and place it on a serving dish
10. Assemble the plate and add around 200g of warm baked beans.
